This is one of our favourite cakes to whip up! The recipe is very easy to follow and with this fabulous mix of orange and cinnamon it makes us feel all festive!
To start you will need to have:
250 g self raising flour
100 g butter
3 eggs
100 g sugar
2 tablespoons ground cinnamon
2 tablespoons orange juice
2 tablespoons honey
1/2 teaspoon bicarbonate of soda
Grated zest of one
Pinch salt
Some icing sugar to sprinkle on top of the cake
Method:
Start by pre heating the oven to 160 C.
Prepare a cake tin and line with baking paper.
Make sure you sift the flour into a bowl and add the cinnamon and grated orange rind.
Next add the butter and rub in until it resembles fine breadcrumbs (the fun part). Add to the sugar, salt and bicarbonate of soda.
In a separate bowl beat the eggs. Now we add the honey to the eggs, but to make it easier to work with, heat the honey a little to soften it up.
We then add the orange juice to the eggs.
Almost there now! Next we add the egg and honey mix to the flour mixture and stir gently. If the mixture seems to be a little lumpy don’t worry.
Pour the batter into the cake tin and bake for 40 minutes.
Leave to cool.
To finish dust a little icing sugar on the surface.
The final step…eat!! Yummy!
